INGREDIENTS:

1/2 banana (frozen) 1 cup orange juice 2 Tablespoons ff Cool Whip 1 to 1 1/2 cups crushed ice

 

PREPARATION:

Slice the banana and put into blender with the orange juice and Cool Whip. Gradually add the crushed ice, as you blend ingredients for 30 to 45 seconds.

SERVING SUGGESTIONS:

Spoon or pour into a frosty glass and enjoy!

INGREDIENTS:

3 cups ff half-and-half 

3 large egg yolks 

3 tbsp sugar 

1/4 cup dark rum (or 1/4 tsp rum extract) 

1/2 tsp vanilla extract 

6 tbsp pasteurized liquid egg whites 

1/4 tsp freshly ground nutmeg

 

PREPARATION:

To warm the yolks to a safe temperature, fill a large skillet halfway with cold water. Combine 1/3 cup of the half-and-half, the yolks and 1 tbsp of the sugar in a small saucepan. Warm over very low heat; stirring constantly and gently with a small spatula, until they just begin to thicken, about 2 minutes. Immediately remove the saucepan from the heat and place it in the water-filled skillet, continuing to stir constantly until slightly cooled. Remove the saucepan from the water bath. Add the remaining sugar and heat until smooth. Stir in the remaining half-and-half, the rum and the vanilla extract. Cover and chill thoroughly, at least 2 hours. With an electric mixer on high speed, beat the egg whites in a large clean bowl until they form stiff but not dry peaks, 2-4 minutes. Whisk them gently into the yolk mixture, until well incorporated. Sprinkle with nutmeg and serve at once.

 

SERVING SUGGESTIONS:

If you use pasteurized eggs, you can skip the first step with the warming of the eggs.

2 medium fresh peaches -- peel, pit, quarter 

1 medium nectarine -- pit, quarter 

1 cup orange juice 

1/2 cup water 

1/2 cup fresh strawberries 

1 small kiwi fruit -- peeled

 

PREPARATION:

Place all ingredients in a blender. Process on high until creamy, about 1 minute. Serve immediately in chilled glasses. Garnish with fresh mint sprigs.

4 fresh pineapple slices

1-3/4 cups diet lemon-lime soda pop

 

PREPARATION:

Chop the pineapple and process in a blender or food processor for a few seconds until it is well crushed. Mix together the orange juice and lemon-lime soda. Divide the crushed pineapple between 4 glasses and top with the juice mixture. Serve chilled.
